The village of Paterno is lucky enough to have its own olive-pressing plant or 'frantoio'.
Frantoio Verducci is run by brother and sister Emiliano and Flavia and is open from early November to mid/late December for the cold pressing of local olives, making the highest quality extra-virgin olive oil. You need to make a booking as everyone has just this 8 week period to harvest and press their olives. And you must stay and watch the whole 2-hour process - the locals don't let their olives out of their sight!
